Karanji is a special snack during Diwali festival. Mainly it is popular in Maharashtrian cuisine. It is a savory also offered during Ganesh chaturthi. Also, it is called as Diwali Faral. There are many other items that is offered during Diwali like:-
- Coconut Barfi
- Chocolate Diyas
- Chakli
- Chivada
The other name is gujiya for karanji. Basically the stuffing is made with coconut, dryfruits, poppy seeds(khaskhas) and sugar. There are different methods for stuffing inside the Karanji. But, here I have done with above mentioned items. Let us have a look.
How to prepare Karanji ?
Ingredients for Karanji
1 Bowl Rawa |
Food color(I have taken green and orange) |
1 tbsp velchi powder |
Salt as per taste |
3 Tbsp oil |
1 1/2 grated cocount |
chopped cashews and almonds |
2 tsp ghee |
1 cup of powdered sugar |
2 tbsp corn flour |
Khaskhas(poppy seeds) |
How to prepare Outer Cover?
For outer cover take 1 full bowl of Rawa and add 1 tsp of salt or else according to your taste.
Heat 3 tbsp of oil or else ghee and put the heated oil inside the Rawa and mix it well before adding quantity of water.
Gradually add some water in it and mix properly. After adding water make the dough. Make 3 equal parts of dough so that you can add the food color inside the dough.
Tips:- Do not make the loose dough either the karanji will not be properly prepared during frying. It will open during frying
Add food color inside the dough and pess the dough properly. You can take any food color but make sure colors are bright either the color will not be visible after frying.
After adding food color make sure you should keep it for rest atleast for an hour. After resting start preparing for it.
How to make Satyacha Mixture ?
Satyachi Karanji also called as khajyache karanji is prepared from 2 tbsp of corn flour and 2 tsp of ghee and mix it properly. Tere should be no lumps as we are going to apply inside the roll portion.
In this way Satyacha mixture looks like which is going to be spread on chapati portion.
Roll all the 3 portions of dough properly after resting. After rolling the dough spread the satyacha mixture onto it so that the karanji will be smoothier and tasty while eating.
Apply Maida on all rolls so that we can place them on each other and it will stick properly. After rolling them together it will not open.
Place all the rolls on one another and make a one big roll and cut them into pieces. You can cut them into any shapes whatever you like according to your choice. But, all the pieces should be properly cut into fine pieces.
How to prepare Stuffing?
Grate the dry coconut properly and heat it inside the pan for almost 5-6 minutes. Heat it properly as you will get the fine texture.
Add 200 gms of powdered sugar, then add velchi powder and add dryfruits and mix it well.
Roll out the pieces and add the stuffing inside it in the middle so that you can easily fold it into another portion.
Fold it properly and gently add it insid ethe ghee for frying. Make sure you deep fry it.
Your Tricolor Karanji is now ready to serve
